Preparing the suitable chicken marinade depends on what you’re going to do with the chicken and how flavorful you want it. For example, grilled chicken marinade depends on using herbs and spices to obtain a delicious taste and strong flavor. The same should be done with barbecued chicken while in case of baked chicken, it is much better to use honey or pomegranate vinegar for a delicious sweet glaze. And surely marinating cutlets is different from marinating a whole chicken for barbecue or baking; the time and ingredients differ.
A good chicken marinade depend basically on a tenderizing ingredient, such as lemon juice, white vinegar, apple cider vinegar, pomegranate vinegar, baking soda, yogurt, butter milk, etc.
All these ingredients should be used in little amounts as they often give a sour, undesired taste, in addition to forming dangerous compounds when exposed to the heat. The same happens when we use honey and sugar to give a sweet glaze for the baked and barbecued chicken; it usually develop harmful compounds.
Fresh onion, garlic, ginger root, and a wide variety of spices are used to flavor the chicken. In addition to that, a zesty, aromatic ingredient should be used for intense flavor; so using grated lemon peel and fresh herbs like celery, parsley, thyme, oregano and basil is recommended.
