Rice salad is a nutritious meal that you can cook for your kids or when you are hosting a party with other foods. I like to cook it in winter, however it is suitable for all seasons, but I make a warm rice salad with chicken and other foods.
Ingredients of rice salad:
1 cup of white rice
2 cups of water to cook the rice
6 hard boiled eggs “optional”
1 package of frozen peas and carrots “cooked”
1 cup of chopped celery “or parsley”
¼ cup of chopped red onion “or green onion”
1 cup of mayonnaise
1 tsp of mustard
1 tsp of lemon juice
¼ of sweet pickle relish “or black olives”
1 can of your favorite tuna “optional”
Grated cheese “optional”
Salt and pepper
Preparation of rice salad:
In a small sauce pan, boil the water, add the rice and simmer on low heat for 20 minutes.
Chop the hard boiled eggs or cut them into smaller pieces.
In a big glass bowl, put the lemon juice, salt and pepper, mustard, mayonnaise and pickle relish. Stir the ingredients until they are well mixed then add the tuna, onions, parsley, carrots and peas. Stir gently until the salad is fully covered with the sauce. Finally, add the eggs and stir slowly then let the bowl aside.
When the rice is cooked, remove the lid and let it to cool to room temperature then add it to the salad.
Toss the rice salad so that the rice is totally mixed with the ingredients and covered with the sauce.
Serve at once with the grated cheese on top.
