Spaghetti with meatballs recipe, by our chief Aya Ahmed at Aya’s Kitchen.
– 700 gm of spaghetti pasta
– 700 gm of minced meat
– Fresh tomatoes juice ‘or 2 tbs of canned sauce’
– 1 big grated onion
– 1 big onion, cut into thin slices
– 1 meat soup cube
– Cumin, pepper and salt
– Oil and water
1- In a bowl, mix the minced meat with the grated onion, pepper, cumin and salt.
2- After the meat is well mixed with the onion, shape it with your hands into small balls and put on a big plate in the fridge for 2 hrs.
This step helps keep the meatballs in shape without splitting when it is cooked.
3- While chilling the meatballs, put a large pan on the stove with nearly 3 liters water, or more if needed.
4- Heat the water until boiling and then lift the lid, add appropriate amount of salt and half tbs of oil, and finally put the pasta.
Keep the pasta in its original length ‘don’t divide into halves’. That will make it easier to roll on the fork while you eat it.
5- Don’t let the pasta without stirring while it is cooked or it will stick down to the bottom.
6- Test if the pasta is fully done, with a fork. If so, turn off the stove and drain the water with a big pasta drainer.
7- Prepare the tomato sauce, either with or without onions, by heating 2 tbs of oil in a medium pan and frying small amount of minced onion until it takes golden color. Add the tomato juice or canned puree with small amount of water. Add the soup cube, salt and pepper, then allow to cook on low heat.
If you don’t like onions, fry a tbs of puree with the soup cube and spices, add ½ tbs of mustard then the juice and let it boil until cooked.
8- Spread the onion slices in a skillet and spread the meatballs then put on high heat with a dash of oil at the bottom. The onions are being fried while the meat heats up and produces its juices. By then, lower the heat to medium or low, cover and let it until all juices are gone. Test with a knife or a fork, and after it is fully cooked pour a small amount of tomato sauce and let it aside to absorb the flavor.
9- Put the spaghetti in the tomato sauce pan and mix with a spatula, then serve in dishes with meatballs on top.
